I love this salad, with the crunch of the asparagus, the sweetness of the strawberries, and the sugar coated almonds that add the extra oomph. The lettuce that not only make it good but also special, picked from our garden that I share with the neighborhood bunny who comes by to visit in the late afternoons. There seems to be plenty for all of us..
1 head romaine lettuce
1/2 bag of baby spinach leaves
a bundle of asparagus-steamed and chilled
1 pint of strawberries-sliced
1/3 cup sliced almonds-sugar toasted
Place ingredients in a large bowl.
1/4 cup rice vinegar
2 Tablespoons olive oil
1/4 cup sugar
1/2 teaspoon salt
1/2 teaspoon pepper
Mix dressing ingredients in a jar until combined. Pour over salad and enjoy.
