Honey Salmon Salad

After eating out for what seems like forever it was time to prepare something healthy at home.  This was light, but filling and really good.

HONEY SALMOND SALAD, HONEY, GARLIC, OLIVE OIL, WHITE WINE VINEGAR, LEMON THYME, SALT, PEPPER, SALMON, FRESH GREENS, GRAPE TOMATOES, GARLIC/BUTTER CROUTONS, GOAT CHEESE, CORN ON THE COB


1/4 cup honey
1 1/2 teaspoons minced garlic
1 Tablespoon olive oil
1 Tablespoon white wine vinegar
1 Tablespoon fresh lemon thyme leaves
salt and pepper to taste
2 pounds salmon
Fresh greens
grape tomatoes
garlic/butter croutons
goat cheese
1 corn on the cob

Preheat oven to 375'.  Line a baking pan with foil.  Stir together honey, olive oil, garlic, lemon thyme, white wine vinegar, salt and pepper.  Place salmon onto foil and fold up all four sides.  Pour the honey mixture over the salmon.  Completely enclose the salmon in the foil.  Place in the oven and bake until cooked completely.  About 15-20 minutes.

Cook the corn, cutting off the cob when done and cool to room temp.

In bowl, place greens, layer with tomatoes, goat cheese, corn, and croutons.  Top with honey salmon.
Serve with dressing of your choice.
