Abby Gail's Hearty Bean Soup

Soup Ingredients: 
1 bag 15 bean soup mix (soak beans overnight)
5 cups water
3 cups low-sodium chicken broth
1 (28 ounce can) chopped tomatoes
3 large chicken breast, marinated, recipe below
3 large jalapeños, sliced with seeds
1 onion, chopped
2 Tablespoons minced garlic
salt and pepper as needed

Marinade Ingredients:
3 chipotle peppers in adobo sauce, chopped
juice of 2 limes
1 garlic glove minced
1/2 teaspoon salt
2 Table minced cilantro

Combine all marinade ingredients in zip lock bag along with chicken and marinade overnight in refrigerator.  Soak beans overnight in 3 times the liquid of beans.  In crock pot combine soak beans, water, chicken broth, jalapeños, onion, garlic, and marinaded chicken.  Cook on high for about 4 hours, until beans are tender.  Stir in tomatoes 30 minutes before serving.  Salt and pepper as needed.

I hope you enjoy this as much as I did.  It's a great recipe to make using your crockpot.  If your lucky enough to have leftovers if freezes beautifully.
