Happy Father's Day

My dad was a solder in the Air Force, a railroad man with Union Pacific, a survivor after falling down a 35' pole, mauled by a pit bull, thrown by a 600lb. heifer and thrown on top of a rattlesnake thanks to brother Robert "Bob".  He was an electrician with Southwestern Electric, an outdoorsman, a husband, an he sure did love my mama!   But most importantly, he was my daddy and he had a signature smile that never left his face.

Cannas

Coincidentally my dad's Orange Cannas bloomed for the first time this season for me on Father's Day.

Two of my daddy's favorite breakfast items, belgian waffles and bacon.  This man loved his BACON!!!

Belgian Waffle


Belgian Waffle Ingredients:
2 cups all-purpose flour
3/4 cup sugar
3 1/2 teaspoons baking powder
2  eggs, separated
1  1/2 cups milk
1 cup butter, melted
1 teaspoon vanilla extract
berries and or syrup

Directions:
Combine flour, sugar and baking powder.  In another bowl, lightly beat egg yolks.  Add milk, butter and vanilla; mix well.  Stir into dry ingredients just until combined.  Beat egg whites until stiff peaks form; fold into batter.
In a preheated waffle iron bake according to manufactures's directions until golden brown.  Serve with berries or syrup.  Recipe from: http://www.tasteofhome.com/recipes/true-belgian-waffles
Yield: 10 waffles (about 4 1/2")
