Have you ever been to Dallas and can't get out. Well thats what I was afraid was happening today. We drove and drove, the roads taking us many directions. Elvira, our Garmin recalculating us a kazillion times due to endless construction. Magically we popped out onto the interstate that lead us home, but not before the storms hit.
Time for dinner, and getting back late I decided to clean out the refrig, tumbling upon the ingredients for Creamy Celery Soup.
How many times have you purchased celery just needing a little bit? I do that often, then letting the unused set in the refrigerator until it goes bad. Not anymore. Here is a recipe for celery soup and it is really good. Even my husband likes it and he can be kind of picky sometimes.
Ingredients:
1 pound celery, chopped
1 medium potato, diced
1 small onion, chopped
4 Tablespoons butter
32 ounces chicken stock
4 teaspoons fresh dill
4 Tablespoons cream
1 garlic glove
salt and pepper to taste
In 4 Tablespoon butter, let celery, onion, garlic and potato simmer for about 10 minutes. Add dill weed and stock. Stew for 20 minutes.
In a blender, blend the celery, onion, garlic potato, dill weed and stock until smooth, adding a little milk if to thick. Back in the pot bring to a low boil and add salt and pepper to taste.
Put the cream into the soup bowl, and pour the soup on top. Swirl round with the spoon before serving.
