Saturday was game day here in big orange country. The first home game of the season. For weeks The Vol's have been the talk of our gatherings. I was downtown Friday afternoon and there were Vol's and Sooner's all over Market Square wearing the orange and crimson proudly, marking their territory. Saturday, it looked as though someone had spilled a can of orange paint on campus. It was apparent that this game was taking place on Good ol' Rocky Top.

The food was plentiful and yummy at the tailgate. For me, this was the BEST part of the day. I loved it.

In front of a sold out crowd, the Oklahoma Sooners defeated the Tennessee Vol's going into two overtimes with a score of 31-24.

2 cans Mexicorn, drained
8 ounce package of Shredded Mexican Blend Cheese
Tops of 3 bunches of green onions, sliced1 can green chilies, diced
1/3 cup of jalapeños (from a jar) chopped
Tostitos Chips for serving
Instructions:

4 ripe avocados
1 jalapeno, minced
1/2 medium red onion, chopped
1 medium tomato,chopped
1 Tablespoon cilantro, minced
Juice from 1/2 lime
salt
1/2 teaspoon chili powder
1 teaspoon cumin

Instructions:
1. Half avocados and scout out the avocado pulp into a mixing bowl and mash with a fork.
2. Seed and mince jalapeno. Finely chop red onion and tomato. Add veggies to avocado.
3. Squeeze in lime juice and add remaining ingredients to the bowl, mix well. Taste to see if you need more salt.
